A Belgian Style Tripel fermented with red wine yeast then transferred to Woodford Reserve Master Distillers Collection Barrels (Woodford bourbon is aged another year in Pinot Noir Barrels) for a second fermentation with Brett
and aged for 9 months.

Derogation Sour Alicante Wine Grape Ale (Ale)

Golden ale fermented and aged in red wine barrels for 10 – 12 months.  The beer goes through a second fermentation when the  Alicante wine grapes are added to the barrels.  This beer has intense color and effervescence giving it a champagne like character.

Aged in red wine barrels for 10 months.  A treasure trove of Maine Blueberries soured with lacto and Brett.

Jali (Fruit Beer)

Primary fermentation in Herradura Tequila Barrels with a secondary fermentation of agave nectar, apricots and grilled jalapenos. The nose explodes with jalapeno while the attack is more fruit forward with a slight warmth on the back end. Jali finishes relatively dry with slightly acidic, funky notes from the wild brettanomyces.
